Warm Pumpkin Cheese Dip Recipe

Ingredients
  • 1/2 tsp butter
  • 1 (15-oz) can pumpkin
  • 2 tsps sliced fresh or 1/2 tsp dried thyme
  • 1 tsp salt
  • 1/3 c evaporated fat-free milk
  • 1 c thinly sliced leek
  • 1 1/4 c plain low-fat yogurt
  • 3/4 c (3 oz) goat cheese
  • 3 large egg whites

Directions
  • Step #1 Preheat oven to 375º.
  • Step #2 Spoon yogurt onto several layers of heavy-duty paper towels; spread to 1/2-inch thickness.
  • Step #3 Cover up with extra paper towels; let this stand 5 mins.
  • Step #4 Scrape into a large bowl using a rubber spatula.
  • Step #5 Melt butter in a skillet over medium-high heat.
  • Step #6 Add leek; sauté 5 mins or until tender.
  • Step #7 Remove from heat, & stir in the thyme & salt.
  • Step #8 Place strained yogurt, goat cheese, & remaining ingredients In a large-ish bowl, & beat with a mixer at medium speed just until smooth.
  • Step #9 Stir in leek mixture.
  • Step #10 Spoon pumpkin mixture into a 1-quart baking dish.
  • Step #11 Bake at 375º for 25 mins or until dip is bubbly & lightly browned.
  • Step #12 Serve warm.
