Salmon Patties On Lightly Dressed Mixed Greens Recipe

Ingredients
  • 10 c mixed salad greens
  • 2 tbsps olive oil
  • 1 tbsp capers, rinsed & drained
  • 1/4 tsp freshly ground pepper
  • 2 tsps rice vinegar
  • 1/2 tsp hot sauce
  • 1/4 tsp coarse salt
  • 1/4 c extra-virgin olive oil
  • 1 (1-lb) fresh salmon fillet
  • 1 tsp Worcestershire sauce
  • 2/3 c cracker meal, divided
  • 1 tsp Dijon mustard
  •  Caper Tartar Sauce
  • 1 c loosely packed fresh parsley leaves
  • 1 tsp dried dillweed
  • 4 green onions, cut into 1-inch pieces
  • 1 large egg
  • 2 medium tomatoes, each cut into 12 wedges

Directions
  • Step #1 Remove skin & bones from fillet; cut fish into 1-inch pieces.
  • Step #2 Set aside.
  • Step #3 Pulse parsley in a food processor/blender until minced; add green onions, & salmon, capers, & pulse 3 to 4 times or until mixture resembles ground beef.
  • Step #4 Add egg, dillweed, 3 tbsps cracker meal, & next 4 ingredients; pulse 3 to 4 times or until mixed.
  • Step #5 Shape mixture into 8 patties.
  • Step #6 Dredge patties in remaining cracker crumbs, shaking off excess crumbs.
  • Step #7 Sauté patties in 2 tbsps olive oil In a large-ish skillet 3 mins on each side or until golden brown.
  • Step #8 Remove from skillet; keep warm.
  • Step #9 Whisk together vinegar, & 1/4 c olive oil; pour over salad greens & tomatoes, mustard, tossing carefully.
  • Step #10 Serve salmon patties over salad with Caper Tartar Sauce.
