Cider Roasted Chicken Recipe

Ingredients
  • 2 1/2 c apple cider
  • 6 small onions, peeled & quartered
  • 1/4 c butter or margarine
  • 6 bacon strips
  • 6 small unpeeled red potatoes, quartered
  • 1 (6 lb) whole roasting chicken
  • 2 small tomatoes, quartered
  • 1 medium green pepper, cut into strips

Directions
  • Step #1 Place chicken in a roasting pan; dot with butter.
  • Step #2 Bake, uncovered, at 375 degrees F for 15 mins.
  • Step #3 Reduce heat to 325F degrees F; bake for 2 hrs.
  • Step #4 Pour cider over chicken.
  • Step #5 Add potatoes, onions & peppers to the pan; place bacon over chicken breast.
  • Step #6 Bake 1 hr longer, basting often.
  • Step #7 Add tomatoes to the pan.
  • Step #8 Bake 30 mins longer or until a meat thermometer reads 180 degrees F.
  • Step #9 Cover & let this stand 10 mins before carving.
  • Step #10 Thicken the pan juices for gravy if desired.
