Roasted Tomatillo Guacamole Recipe

Ingredients
  • 1 tomatillo, papery skin removed
  • 1/3 c loosely packed cilantro leaves, sliced
  • 1/2 medium white onion, peeled
  • 1 garlic clove, peeled
  •  At least 1 tbsp lime juice
  • 1 or 2 fresh Jalapeños, stems removed, & chiles halved & seeded
  •  At least 1/2 tsp salt
  • 1 avocado, peeled & cut into chunks

Directions
  • Step #1 In a large, & tomatillo on all sides, pan-roast the Jalapeños, garlic, onion, unoiled frying pan over med-heat/flame, 20 to 25 mins total.
  • Step #2 In a mixer, whirl the vegetables with 1/4 c water until mixed but still chunky.
  • Step #3 Add avocado & lime juice; pulse until mixed.
  • Step #4 Add cilantro & salt, pulse to mix, & add more salt and/or lime juice to taste.
  • Step #5 Note: Nutritional analysis is per tbsp.
