Mojito Shrimp Recipe

Ingredients
  • 2 tbsps fresh lime juice
  •  Mojito Marinade (recipe follows)
  •  Mint sprigs
  • 1 to 1 1/2 lbs. peeled, deveined shrimp (21 to 30 per lb., tails on)

Directions
  • Step #1 Prepare a gas or charcoal grill for high heat (you can hold your hand 1 to 2 in.
  • Step #2 above cooking grate only 1 to 2 seconds).
  • Step #3 Meanwhile, put shrimp in a 1-gal.
  • Step #4 resealable plastic bag & pour in marinade.
  • Step #5 Seal & marinate at about room temp 15 to 20 mins.
  • Step #6 Remove shrimp, reserving marinade.
  • Step #7 Thread shrimp onto 6 or 7 (10- to 14-in.
  • Step #8 ) metal or bamboo skewers.
  • Step #9 Arrange shrimp on grill & baste with marinade (dab some mint & shallot onto shrimp); close lid.
  • Step #10 Cook until shrimp are just beginning to brown, 1 to 2 mins.
  • Step #11 Turn shrimp over, baste again, & close lid.
  • Step #12 Cook 1 to 2 mins until browned but still moist in center (cut to check).
  • Step #13 Transfer shrimp to a platter, drizzle with lime juice, & garnish with mint sprigs.
  • Step #14 Mojito Marinade: In a medium bowl, 1/3 c sugar, mix 20 sliced fresh mint leaves, & 1 thinly sliced shallot.
  • Step #15 Pound with a wooden spoon to coarsely crush.
  • Step #16 Whisk in 1/3 c light rum, 3 tbsp.
  • Step #17 fresh lime juice, 1 tbsp.
  • Step #18 vegetable oil, 1 tsp.
  • Step #19 freshly grated lime zest, & 1 tsp.
  • Step #20 coarse kosher salt.
  • Step #21 Whisk until salt dissolves.
  • Step #22 Makes about 1 c, enough for up to 1 1/2 lbs.
  • Step #23 shrimp.
