Loaded Nachos Recipe

Ingredients
  • 8 oz ground round
  • 3 tbsps low-fat sour cream
  • 27 baked tortilla chips (about 3 oz)
  • 1/2 tsp dried oregano
  • 1 garlic clove, crushed
  •  Cooking spray
  • 1 (14.5-oz) can no-salt-added sliced tomatoes, undrained
  • 1/4 c sliced green onions, divided
  • 1/4 c minced fresh cilantro, divided
  • 1 tsp chili powder
  • 1/4 tsp salt
  • 27 pickled jalapeño pepper slices (optional)
  • 1 (16-oz) can fat-free refried beans with mild chiles
  • 1 c (4 oz) shredded Monterey Jack cheese
  • 1/2 c sliced bottled roasted red bell peppers

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Cook meat In a large-ish nonstick skillet over medium-high heat until browned, stirring to crumble.
  • Step #3 Stir in the bell peppers & next 5 ingredients (bell peppers through garlic), & cook for 8 mins or until thick, stirring every once in awhile.
  • Step #4 Remove from pan.
  • Step #5 Place pan coated with cooking spray over med-heat/flame until hot.
  • Step #6 Add beans, 2 tbsps cilantro, & 2 tbsps green onions; cook 2 mins or until thoroughly heated.
  • Step #7 Place chips on a large serving platter; spread warm bean mixture over each chip.
  • Step #8 Spoon meat mixture over bean mixture; top this with cheese.
  • Step #9 Bake at 375° for 9 mins or until cheese melts.
  • Step #10 Remove from oven; top this with sour cream, 2 tbsps cilantro, & 2 tbsps onions.
  • Step #11 Top with jalapeño pepper slices, if desired.
  • Step #12 Serve as soon as possible.
