Gül's Lentil Patties Recipe

Ingredients
  •  Romaine lettuce leaves
  • 1 small onion, finely minced
  • 1 c uncooked bulgur wheat
  • 1/4 c fresh lemon juice
  • 1/8 tsp freshly ground black pepper
  • 1 tsp paprika
  • 1/4 tsp ground cumin
  • 2 tbsps olive oil
  • 1/8 tsp ground red pepper
  • 4 c water
  • 1/3 c sliced fresh parsley
  • 1 c red lentils
  • 1/2 tsp salt
  •  Lime wedges
  • 2 tbsps tomato paste

Directions
  • Step #1 Cook lentils, uncovered, in water over medium-high heat 12 to 15 mins or until tender (do not drain).
  • Step #2 Stir in tomato paste & bulgur; cover & let this stand 20 mins.
  • Step #3 Combine lentil mixture, onion, & next 8 ingredients.
  • Step #4 Form football-shaped patties, using a heaping tbsp of mixture for each patty.
  • Step #5 Serve on romaine lettuce leaves with lime wedges.
