Sweet-and-sour Shrimp En Papillote Recipe

Ingredients
  • 2 tbsps honey
  • 2 tbsps fresh lemon juice
  • 1/4 c thinly sliced green onions
  • 1 (8-oz) can unsweetened pineapple chunks, undrained
  • 1 tbsp red wine vinegar
  • 1 tbsp low-sodium soy sauce
  • 2 c sliced mushrooms
  • 1 tsp minced peeled gingerroot
  • 2 dozen medium shrimp, peeled & deveined (about 1 lb)
  • 1 tsp cornstarch

Directions
  • Step #1 Drain pineapple, reserving juice; set pineapple aside.
  • Step #2 Combine pineapple juice, honey, & next 5 ingredients (honey through gingerroot) in a bowl; stir well.
  • Step #3 Combine the mushrooms & green onions in a small bowl; toss well.
  • Step #4 Cut 8 (15-inch) squares of parchment paper.
  • Step #5 Fold each square in half; open each, & divide pineapple chunks & shrimp evenly among squares, near the fold.
  • Step #6 Top each serving with 1/4 c mushroom mixture.
  • Step #7 Drizzle 1 tsp pineapple juice mixture over each serving; discard remaining juice mixture.
  • Step #8 Fold paper, & seal edges with narrow folds; place the packets on baking sheets.
  • Step #9 Bake at 400° for 10 mins or until puffed & lightly browned.
  • Step #10 Place packets on individual serving plates, & cut open; serve as soon as possible.
