Caramelized-onion, Spinach, And Bacon Quiche Recipe

Ingredients
  • 1/4 c low-fat sour cream
  • 3/4 c Caramelized Onions (about 3 c uncooked)
  • 1 (10-oz) package frozen sliced spinach, thawed, drained, & squeezed dry
  • 2 tbsps minced shallots
  • 2 large egg whites
  •  Cooking spray
  • 1/4 tsp salt
  • 1 (10-oz) can put in the fridged pizza crust
  • 1 large egg
  • 1/8 tsp pepper
  • 1/3 c sliced Canadian bacon
  • 1 c evaporated skim milk
  • 1/4 c (1 oz) shredded reduced-fat Monterey Jack cheese

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Shape the dough into a 4-inch circle; cover & let this stand for 5 mins.
  • Step #3 Roll the dough into an 11-inch circle on a lightly floured surface.
  • Step #4 Fit the dough into a 9-inch pie plate coated with cooking spray, & flute.
  • Step #5 Combine the spinach, sour cream, & shallots in a small bowl.
  • Step #6 Combine the evaporated milk, salt, egg whites, pepper, & egg in a medium bowl, & stir well with a whisk.
  • Step #7 Stir 1/3 c milk mixture into spinach mixture.
  • Step #8 Spoon the spinach mixture into bottom of prepared crust.
  • Step #9 Add Caramelized Onions, & top this with bacon & cheese.
  • Step #10 Pour the remaining milk mixture over cheese.
  • Step #11 Place pie plate on a baking sheet, & bake this at 350° for 45 mins or until set.
  • Step #12 Let quiche stand 10 mins.
