Marinated Tomatoes With Basil And Balsamic Vinegar Recipe

Ingredients
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 c ice water
  • 1/2 to 1 c sliced fresh basil
  • 2 garlic cloves, minced
  • 1/4 c olive oil
  • 2 tbsps water
  • 1 small red onion, thinly sliced
  • 3/4 c balsamic vinegar
  •  Parmesan cheese curls (optional)
  • 2 tsps sugar
  • 6 tomatoes, thinly sliced
  •  French bread (optional)

Directions
  • Step #1 Combine onion slices & 4 c ice water In a large-ish bowl; let this stand 30 mins.
  • Step #2 Drain & pat dry with paper towels.
  • Step #3 Whisk together vinegar, 2 tbsps water, olive oil, & next 4 ingredients.
  • Step #4 Stir in basil.
  • Step #5 Layer half of tomato slices in a shallow dish.
  • Step #6 Top with half of onion slices.
  • Step #7 Drizzle with half of dressing.
  • Step #8 Repeat with remaining tomato slices, onion slices, & dressing.
  • Step #9 Cover up & chill 30 mins.
  • Step #10 Sprinkle top with Parmesan cheese curls, if desired, & serve this with bread, if desired.
  • Step #11 Serve at about room temp.
  • Step #12 Note: Recipe may be prepared up to 3 hrs ahead.
