Swiss Chard Spanakopita Casserole Recipe

Ingredients
  • 2 1/4 c minced white onion
  • 9 c sliced trimmed Swiss chard (about 1 1/2 lbs)
  •  Cooking spray
  • 3 garlic cloves, minced
  • 1/4 tsp black pepper
  • 3 large egg whites
  • 1 c (4 oz) crumbled feta cheese
  • 3/4 c minced green onions
  • 3 tbsps minced fresh mint
  • 1/2 c (2 oz) freshly grated Parmesan cheese
  • 10 (18 x 14-inch) sheets frozen phyllo dough, thawed
  • 6 tbsps sliced fresh parsley
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Step #3 Add white onion; sauté 7 mins or until golden.
  • Step #4 Add green onions & garlic, & sauté 1 min.
  • Step #5 Stir in chard; cook 2 mins or until chard wilts.
  • Step #6 Stir in parsley & mint, & cook 1 min.
  • Step #7 Place In a large-ish bowl; cool slightly.
  • Step #8 Stir in cheeses, salt, pepper, & egg whites.
  • Step #9 Place 1 phyllo sheet on a large cutting board (cover remaining phyllo to prevent drying), & coat with cooking spray.
  • Step #10 Top with 1 phyllo sheet, & coat with cooking spray.
  • Step #11 Repeat procedure with 3 extra sheets.
  • Step #12 Cut phyllo stack into a 14-inch square.
  • Step #13 Place square in center of a 13 x 9-inch baking dish coated with cooking spray, allowing phyllo to extend up long sides of dish.
  • Step #14 Cut 14 x 4-inch piece into 2 (7 x 4-inch) rectangles.
  • Step #15 Fold each rectangle in half lengthwise.
  • Step #16 Place a rectangle against each short side of dish.
  • Step #17 Spread the chard mixture evenly over phyllo.
  • Step #18 Place 1 phyllo sheet on a large cutting board (cover remaining phyllo to prevent drying), & coat with cooking spray.
  • Step #19 Top with 1 phyllo sheet, & coat with cooking spray.
  • Step #20 Repeat procedure with remaining phyllo sheets.
  • Step #21 Place 18 x 14-inch phyllo stack over chard mixture.
  • Step #22 Fold phyllo edges into center.
  • Step #23 Coat with cooking spray.
  • Step #24 Score phyllo by making 2 lengthwise cuts & 3 crosswise cuts to form 12 rectangles.
  • Step #25 Bake at 350° for 40 mins or until golden.
  • Step #26 Note: Cut the phyllo stacks so they fit in & up the long side of the baking dish.
  • Step #27 Arrange folded section against short edges of dish to encase filling.
