Green Herb Squares Recipe

Ingredients
  • 3 tbsps slivered almonds
  • 2 tbsps all-purpose flour
  • 1 tbsp sliced fresh tarragon leaves or 1 tsp dried tarragon
  • 1/4 c coarsely sliced fresh mint leaves
  • 1 tbsp sliced fresh dill or 1 tsp dried dill weed
  • 1 c coarsely sliced onion
  • 2 tbsps sliced parsley
  • 1 tbsp sliced fresh cilantro
  • 4 large eggs
  • 1/2 tsp salt
  • 1/4 tsp cayenne
  • 1 c coarsely sliced leeks (white part only)
  • 1/3 c coarsely sliced fresh sorrel (or more Swiss chard)
  • 1 1/3 c coarsely sliced Swiss chard leaves

Directions
  • Step #1 In a mixer or food processor/blender, whirl almonds until very finely ground.
  • Step #2 Add Swiss chard, dill, cilantro, onion, leeks, tarragon, eggs, salt, parsley, flour, mint, sorrel, & cayenne.
  • Step #3 Whirl until smoothly puréed.
  • Step #4 Pour into an oiled 8- or 9-inch square pan.
  • Step #5 Bake in a 300° oven until center barely jiggles when carefully shaken, about 30 mins.
  • Step #6 Cool & cut into 3/4- to 1-inch squares.
  • Step #7 Lift out with a wide spatula.
  • Step #8 Nutritional analysis per piece.
