Smoked Salmon-caramelized Onion Dip Recipe

Ingredients
  • 1/2 (16-oz) loaf French bread
  • 1/3 c mayonnaise
  • 1 tbsp butter, melted
  • 1 (8-oz) package whipped cream cheese
  • 1 tbsp olive oil
  •  Garnish: fresh dill sprigs
  • 1/3 c sour cream
  • 1 tbsp fresh lemon juice
  • 1 tsp sliced fresh dill
  • 1 1/2 tbsps capers, drained
  • 1 (4-oz) package smoked salmon, coarsely sliced
  • 1/2 c butter, melted
  • 1 1/2 c sliced onion

Directions
  • Step #1 Cook onion in 1 tbsp butter & olive oil in a medium skillet over med-heat/flame 5 mins, stirring frequently; cover, & cook 5 mins.
  • Step #2 Uncover, & cook 3 more mins or until soft & golden.
  • Step #3 Set aside.
  • Step #4 Beat cream cheese at medium speed with an electric mixer.
  • Step #5 Stir in mayonnaise & next 4 ingredients.
  • Step #6 Fold in caramelized onion & salmon.
  • Step #7 Cover up & chill in the fridge.
  • Step #8 Cut bread loaf in half lengthwise.
  • Step #9 Brush both sides with melted butter.
  • Step #10 Heat a large, heavy skillet over med-heat/flame until hot.
  • Step #11 Place one half of bread in hot skillet, cut side down, & place a smaller heavy skillet on top of bread.
  • Step #12 Apply pressure to flatten bread.
  • Step #13 Cook 1 to 2 mins or until toasted & browned.
  • Step #14 Turn bread & repeat.
  • Step #15 Repeat with remaining bread half.
  • Step #16 Cut bread into small triangles.
  • Step #17 Serve with dip.
  • Step #18 Garnish, if desired.
