Grilled Shrimp With Tarator Sauce Recipe

Ingredients
  •  Tarator Sauce
  • 1/2 c extra-virgin olive oil
  • 2 3/4 lbs (about 50) fresh large shrimp, peeled & deveined
  • 2 large garlic cloves, thinly sliced
  • 4 fresh rosemary sprigs

Directions
  • Step #1 Place first 3 ingredients In a large-ish shallow baking dish, & toss well.
  • Step #2 Squeeze rosemary sprigs lightly to release flavor, then tuck down into shrimp mixture.
  • Step #3 Cover up & put in the fridge 3 to 4 hrs.
  • Step #4 Thread 5 shrimp on each of 10 long metal skewers (or wooden ones soaked in water), leaving space between shrimp.
  • Step #5 Grill, over high heat (500° to 550°), covered with grill lid, 1 1/2 mins on each side or to desired degree of doneness.
  • Step #6 Serve hot or at about room temp with Tarator Sauce.
  • Step #7 Note: Shrimp may be broiled in the oven rather than grilled.
  • Step #8 Simply broil 4 inches from heat 2 to 2 1/2 mins on each side or to desired degree of doneness.
