Wild Mushroom And Goat Cheese Spread Recipe

Ingredients
  • 2 garlic cloves, minced
  • 1/4 c boiling water
  • 6 tbsps (3 oz) goat cheese, divided
  • 1/2 tsp salt
  • 1/2 oz dried porcini mushrooms
  • 1 tsp extravirgin olive oil
  •  Cooking spray
  • 8 oz wild mushrooms, finely sliced
  • 8 oz cremini mushrooms, finely sliced
  • 1 tbsp finely sliced fresh rosemary
  • 1 tbsp finely sliced fresh thyme
  • 1/4 tsp freshly ground black pepper
  • 5 tbsps sherry
  • 1 tsp butter
  • 1 tbsp sliced fresh parsley
  • 1 tbsp minced shallots

Directions
  • Step #1 Preheat broiler.
  • Step #2 Combine 1/4 c boiling water & porcini mushrooms in a bowl; let this stand 10 mins.
  • Step #3 Strain porcini mushrooms through a sieve over a bowl, reserving liquid.
  • Step #4 Chop mushrooms; set aside.
  • Step #5 Heat butter & oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #6 Add shallots, salt, thyme, rosemary, pepper, & garlic; sauté 2 mins.
  • Step #7 Stir in reserved porcini mushrooms, wild mushrooms, & cremini mushrooms.
  • Step #8 Cook 10 mins or until liquid almost evaporates, stirring frequently.
  • Step #9 Stir in sherry & reserved mushroom liquid, scraping pan to loosen browned bits.
  • Step #10 Cook 5 mins or until the liquid almost evaporates.
  • Step #11 Remove from heat.
  • Step #12 Place mushroom mixture & 3 tbsps cheese in a food processor/blender; process until smooth.
  • Step #13 Scrape the mushroom mixture into an 8-inch square baking dish coated with cooking spray.
  • Step #14 Sprinkle top evenly with remaining 3 tbsps cheese.
  • Step #15 Broil for 7 mins or until edges of cheese begin to brown.
  • Step #16 Remove from heat, & sprinkle with parsley.
