Ingredients
  • 1/2 c extra virgin olive oil
  • 1 tbsp grated orange rind
  • 1 tsp fennel seeds
  • 1 tbsp grated lemon rind
  • 5 c assorted pitted olives
  • 1/2 tsp dried crushed red pepper
  • 2 tbsps fresh orange juice
  • 1/2 tsp dried oregano
  • 1 tbsp minced garlic
  • 1 tbsp fresh lemon juice

Directions
  • Step #1 Stir together olives & remaining ingredients In a large-ish bowl.
  • Step #2 Cover up & chill at least 8 hrs.
  • Step #3 Let stand 30 mins at about room temp before serving.
  • Step #4 Serve olive mixture with a slotted spoon.
