Fiery Stuffed Cherry Pepper Appetizers Recipe

Ingredients
  • 1/2 tsp dried oregano
  • 1 (3-oz) package cream cheese, softened
  • 1/2 tsp dried basil
  • 2 tbsps sour cream
  • 1 1/2 tsps olive oil
  • 1/4 c grated Parmesan cheese, divided
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1 c sliced zucchini (about 2 small)
  • 1 large baking potato
  • 18 cherry peppers
  • 1/4 c dry white wine

Directions
  • Step #1 Cut tops from peppers, & remove seeds & membrane.
  • Step #2 Set tops aside.
  • Step #3 Cook peppers in boiling water to cover 1 min, & drain.
  • Step #4 Plunge into ice water to stop the cooking process; drain & set aside.
  • Step #5 Peel potato, & cut into 1-inch pieces.
  • Step #6 Cook in boiling water to cover 20 mins or until tender; drain & mash.
  • Step #7 Sauté zucchini & next 3 ingredients in hot oil 3 mins.
  • Step #8 Add wine, & cook 2 mins or until liquid is evaporated.
  • Step #9 Remove from heat.
  • Step #10 Stir together potato, zucchini mixture, 3 tbsps grated Parmesan cheese, & next 3 ingredients.
  • Step #11 Spoon into peppers & place this in a lightly greased 13- x 9-inch baking dish.
  • Step #12 Sprinkle top evenly with remaining 1 tbsp cheese, & replace pepper tops.
  • Step #13 Bake at 400° for 10 mins or until lightly browned.
