Yogurt Cheese Appetizer Recipe

Ingredients
  • 1/4 tsp marjoram
  • 1 cucumber, peeled & sliced
  • 2 tsps olive oil
  • 1/4 tsp thyme
  • 4 (6-inch) whole wheat pita rounds, warmed & cut into wedges
  • 1/2 tsp sesame seeds
  •  Yogurt Cheese (see recipe)
  • 1 tsp salt
  • 1 c kalamata olives

Directions
  • Step #1 Spoon Yogurt Cheese into a serving bowl, pressing lightly to flatten.
  • Step #2 Sprinkle top cheese evenly with 1 tsp salt, sesame seeds, thyme, & marjoram; drizzle with olive oil.
  • Step #3 Serve with kalamata olives, cucumber slices, & warm whole wheat pita wedges.
  • Step #4 Yogurt Cheese: Line a fine wire-mesh strainer with 3 layers of cheesecloth or 1 coffee filter.
  • Step #5 Place strainer over a bowl.
  • Step #6 Spoon 3 (8-oz) containers plain yogurt into strainer.
  • Step #7 Cover up with plastic wrap, & chill 24 hrs.
  • Step #8 Remove yogurt cheese, discarding strained liquid.
  • Step #9 Prep: 5 min.
  • Step #10 , Chill: 24 hrs.
