Mussels With Salsa Verde Recipe

Ingredients
  • 1 c water
  • 2 tbsps minced fresh chives
  • 1/3 c mayonnaise
  • 1 c dry white wine
  • 1 tbsp minced fresh cilantro
  • 4 lbs mussels, cleaned & debearded
  • 1 tbsp minced fresh oregano
  • 1 tbsp minced celery
  • 1 tbsp minced fresh parsley
  • 1 lemon, sliced
  • 1/4 tsp fresh lemon juice
  • 1/2 tsp freshly ground pepper
  •  Garnish: lemon slices

Directions
  • Step #1 Bring first 3 ingredients to a boil; add mussels.
  • Step #2 Cover up & cook 5 mins; stir carefully, & cook 5 more mins or until mussels open.
  • Step #3 Remove from heat; drain & let cool.
  • Step #4 Discard any mussels that remain closed.
  • Step #5 Detach mussels from shells, reserving shells.
  • Step #6 Combine mayonnaise & next 7 ingredients in a small bowl.
  • Step #7 Place each mussel in a shell; spoon 1 tsp Salsa Verde over each mussel.
  • Step #8 Place mussels on a platter, & garnish, if desired.
