Cindy's Cheese Wafers Recipe

Ingredients
  • 1/2 c butter, softened
  • 1/2 tsp onion salt
  • 1 tsp ground red pepper
  • 1 (10-oz.) block sharp Cheddar cheese, finely grated
  • 1 tsp Worcestershire sauce
  • 1 3/4 c all-purpose flour
  •  Pecan halves

Directions
  • Step #1 Beat cheese & butter at medium speed with an electric mixer In a large-ish bowl until mixed.
  • Step #2 Add red pepper, Worcestershire sauce, & onion salt, beating just until mixed.
  • Step #3 Gradually add flour, beating until mixture is mixed & smooth.
  • Step #4 Shape dough into 2 (10-inch-long) logs.
  • Step #5 Wrap each log in plastic wrap; chill at least 8 hrs or up to 24 hrs.
  • Step #6 Cut logs into 1/4-inch-thick slices, & place on lightly greased baking sheets.
  • Step #7 Gently press 1 pecan half into center of each slice.
  • Step #8 Bake at 350° for 14 to 16 mins or until lightly browned.
  • Step #9 Remove to wire racks, & let cool completely.
  • Step #10 Olive Cheese Bites: Omit pecan halves.
  • Step #11 Drain 1 (7 1/2-oz.
  • Step #12 ) jar pimiento-stuffed olives on paper towels.
  • Step #13 Prepare cheese wafer dough as directed.
  • Step #14 Pinch off a 1-inch piece of dough.
  • Step #15 Wrap dough around 1 olive; roll in hands to form a ball, covering entire olive with dough, & place on a lightly greased baking sheet.
  • Step #16 Repeat procedure with remaining dough & olives.
  • Step #17 Bake at 350° for 15 mins or until lightly browned.
  • Step #18 Makes about 4 dozen.
  • Step #19 Prep: 15 min.
  • Step #20 , Bake: 15 min.
  • Step #21 per batch.
