Red Pepper Hummus Recipe

Ingredients
  • 1 tbsp tahini (sesame seed paste)
  • 1/2 tsp freshly ground black pepper
  • 1 garlic clove, quartered
  • 1/4 tsp salt
  • 1 red bell pepper
  • 2 1/2 tbsps fresh lemon juice
  • 1 (19-oz) can chickpeas (garbanzo beans), rinsed & drained
  • 1/4 tsp ground cumin

Directions
  • Step #1 Preheat broiler.
  • Step #2 Cut bell pepper in half lengthwise; discard seeds & membranes.
  • Step #3 Place pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
  • Step #4 Broil 10 mins or until blackened.
  • Step #5 Place in a zip-top plastic bag; seal.
  • Step #6 Let stand 10 mins.
  • Step #7 Peel.
  • Step #8 Place bell pepper & remaining ingredients in a food processor/blender; process until smooth.
