Guacamole With Chipotle Tortilla Chips Recipe

Ingredients
  •  Guacamole:
  • 1/3 c sliced onion
  • 8 (6-inch) corn tortillas
  • 1 garlic clove, minced
  •  Cooking spray
  • 1/2 tsp chipotle chile powder (such as McCormick)
  • 1/2 tsp salt
  • 1 tbsp fresh lime juice
  • 3/4 tsp salt
  • 3 tomatillos
  • 3 tbsps sliced fresh cilantro
  • 2 ripe peeled avocados, seeded & coarsely mashed
  • 2 jalapeño peppers, seeded & finely sliced
  • 1/3 c sliced plum tomato
  •  Chips:

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 To prepare chips, cut each tortilla into 8 wedges; arrange tortilla wedges in a single layer on 2 baking sheets coated with cooking spray.
  • Step #3 Sprinkle top wedges with 1/2 tsp salt & chile powder; lightly coat wedges with cooking spray.
  • Step #4 Bake at 375° for 12 mins or until wedges are crisp & lightly browned.
  • Step #5 Cool 10 mins.
  • Step #6 To prepare guacamole, peel papery husk from tomatillos; wash, core, & finely chop.
  • Step #7 Combine tomatillos, onion, & remaining ingredients; stir well.
  • Step #8 Serve guacamole with chips.
