Artichoke-cheese Spread Recipe

Ingredients
  • 2 (8-oz) packages cream cheese, softened
  •  Assorted fresh lettuce
  • 1 c freshly grated Parmesan cheese
  •  Garnishes: bottled roasted red bell pepper strip, slivered; radish slices
  • 3/4 c bottled roasted red bell peppers, drained & sliced
  •  Thin white or wheat bread slices, crusts removed & cut into triangles
  • 1/4 c finely sliced green onion tops
  • 1 (14-oz) can artichoke hearts, drained & finely sliced
  • 1/2 tsp ground red pepper
  • 1 tbsp lemon juice
  • 2 tbsps olive oil
  • 2 garlic cloves, pressed
  •  Red, yellow, & orange bell pepper strips

Directions
  • Step #1 Stir together cream cheese & green onion tops, mixing well; set aside.
  • Step #2 Stir together artichoke hearts & next 5 ingredients.
  • Step #3 Spread one-third of cream cheese mixture on bottom of a 4-c glass bowl lined with plastic wrap.
  • Step #4 Layer with half of sliced roasted bell peppers, 3/4 c artichoke mixture, & one-third of cream cheese mixture.
  • Step #5 Repeat layers with remaining sliced roasted bell peppers, artichoke mixture, & cream cheese mixture.
  • Step #6 Cover up & chill at least 2 hrs.
  • Step #7 Invert onto a serving plate, & remove plastic wrap.
  • Step #8 Serve over lettuce with bread slices & bell pepper strips.
  • Step #9 Garnish, if desired.
