Lobster Martinis With Citrus Salsa Recipe

Ingredients
  • 1 jalapeño pepper, minced
  • 1/4 c vegetable oil
  • 1/2 tsp freshly ground pepper
  • 1/4 to 1/2 tsp salt
  • 1/3 c cider vinegar
  •  Lettuce leaves
  • 1 red bell pepper, sliced
  •  Garnish: fried plaintains
  • 1/2 c thinly sliced red onion
  • 1/4 c sliced fresh cilantro
  • 4 whole lobsters, cooked & cleaned
  • 1 large grapefruit, peeled & sectioned
  • 1/3 c fresh orange juice
  • 3 oranges, peeled & sectioned

Directions
  • Step #1 Remove shell from lobsters, keeping claw meat intact.
  • Step #2 Thinly slice tail meat.
  • Step #3 Combine oranges & next 10 ingredients In a large-ish bowl.
  • Step #4 Add lobster, tossing until well mixed.
  • Step #5 Spoon mixture into lettuce-lined martini glasses or small bowls.
  • Step #6 Garnish, if desired.
