Roasted Bell Pepper-and-olive Pizza Recipe

Ingredients
  • 2 large red bell peppers
  • 2 (1-lb) Italian cheese-flavored pizza crusts (such as Boboli) or focaccias
  • 3/4 tsp olive oil
  • 6 tbsps (1 1/2 oz) freshly grated Parmesan cheese
  • 2 large yellow bell peppers
  • 1/4 c sliced fresh parsley
  • 1/2 c sliced green olives
  • 2 tsps red wine vinegar
  • 1/8 tsp black pepper
  • 2 tsps drained capers

Directions
  • Step #1 Preheat broiler.
  • Step #2 Cut bell peppers in half lengthwise, & discard seeds & membranes.
  • Step #3 Place bell pepper halves, skin sides up, on a foil wrap-lined baking sheet, & flatten with hand.
  • Step #4 Broil 15 for mins or until blackened.
  • Step #5 Place in a zip-top plastic bag, & seal.
  • Step #6 Let stand 15 mins.
  • Step #7 Peel & cut into strips.
  • Step #8 Combine bell peppers, green olives, & next 5 ingredients (olives through black pepper) in a bowl.
  • Step #9 Preheat oven to 350°.
  • Step #10 Divide the bell pepper mixture evenly among pizza crusts; sprinkle with cheese.
  • Step #11 Bake at 350° for 7 mins or until cheese melts.
  • Step #12 Cut each into 12 wedges.
