Roasted Red Pepper Rollups Recipe

Ingredients
  •  Garnish: fresh basil sprigs
  • 1 (7-oz) jar roasted sweet red peppers
  • 1/4 tsp freshly ground pepper
  • 1 (6-oz) container frozen guacamole, thawed
  • 1 (3-oz) goat cheese log
  • 4 (8-inch) flour tortillas

Directions
  • Step #1 Drain roasted peppers, & pat dry with paper towels; coarsely chop.
  • Step #2 Spread tortillas evenly with goat cheese, & spread guacamole evenly over cheese.
  • Step #3 Sprinkle top with sliced red pepper & ground pepper.
  • Step #4 Roll up, pressing edges to seal; cut each roll this into 6 slices using a serrated knife.
  • Step #5 Secure slices with wooden picks.
  • Step #6 Garnish, if desired.
  • Step #7 Note: If time permits, wrap rolls in plastic wrap, & chill 1 hr before slicing.
