Red-red Bean Spread Recipe

Ingredients
  • 1/2 tsp salt
  •  Dash of ground red pepper
  • 1/4 tsp freshly ground black pepper
  • 2 red bell peppers
  • 1 (15-oz) can kidney beans, rinsed & drained
  • 1/2 tsp grated lemon rind
  • 2 tbsps tomato paste

Directions
  • Step #1 Preheat broiler.
  • Step #2 Cut bell peppers in half lengthwise; discard seeds & membranes.
  • Step #3 Place pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
  • Step #4 Broil 10 mins or until blackened.
  • Step #5 Place in a zip-top plastic bag; seal.
  • Step #6 Let stand 5 mins.
  • Step #7 Peel & chop.
  • Step #8 Place bell peppers & remaining ingredients in a food processor/blender, & process until smooth.
