Dad's Pad Thai Recipe

Ingredients
  • 1 tbsp brown sugar
  • 1 tbsp minced garlic
  • 4 eggs
  • 3 tbsps lime juice
  • 1 c green onions cut into 1-inch pieces
  • 3 tbsps peanut oil
  • 1/4 c fish sauce
  • 2 c grated carrots
  • 1 1/2 tsps red pepper flakes
  • 3 tbsps ketchup
  • salt
  • 6 oz pad thai rice noodles
  • 3/4 lb bean sprouts
  • 2/3 c sliced peanuts

Directions
  • Step #1 Bring a pot of water to a boil.
  • Step #2 Blanch the bean sprouts in boiling water for approximately 30 seconds, remove, & drain well.
  • Step #3 When the water returns to a boil, add noodles.
  • Step #4 Cook for 3 to 5 mins until tender but firm; drain & rinse under cold water Beat the eggs with a pinch of salt in a small bowl.
  • Step #5 Stir together the lime juice, brown sugar, ketchup, & fish sauce in a separate bowl; set aside.
  • Step #6 Heat the oil in a wok or large skillet over medium-high heat.
  • Step #7 Fry the garlic for a few seconds.
  • Step #8 Add the pepper flakes & carrot, & cook for one min, then remove.
  • Step #9 Add the beaten egg, & carefully scramble.
  • Step #10 When the eggs have set, noodles, pour in the carrots, bean sprouts, peanuts, sauce, & green onion; toss together.
