Pesto-goat Cheese Cups Recipe

Ingredients
  • 1 (1.4-oz) package crispy pastry shells
  • 1 (4-oz) goat cheese log, crumbled
  •  Garnishes: finely sliced tomato & toasted pine nuts
  • 1/4 c prepared basil pesto

Directions
  • Step #1 Place shells in a shallow pan.
  • Step #2 Divide goat cheese evenly between shells, pressing carefully to fill bottom of each.
  • Step #3 Spoon 1 tsp basil pesto into each shell.
  • Step #4 Bake at 350° for 4 to 5 mins or until thoroughly heated.
  • Step #5 Garnish, if desired.
  • Step #6 Note: For testing purposes only, we used Siljans Croustades Crispy Shells.
