Roasted Pepper On Crostini Recipe

Ingredients
  • 1 tsp ground cumin
  • 1/4 c sliced fresh Italian parsley
  • 1 Anaheim chile pepper*
  • 1 c water
  • 1 tbsp grated lemon rind
  • 1 tbsp fresh lemon juice
  • 2 garlic cloves, minced
  • 12 baguette slices
  • 2 tsps finely sliced preserved lemon**
  • 1/4 c olive oil, divided

Directions
  • Step #1 Broil pepper on an aluminum foil wrap-lined baking sheet 5 inches from heat about 5 mins on each side or until pepper looks blistered.
  • Step #2 Place pepper in a heavy-duty, zip-top plastic bag; seal & let this stand 10 mins to loosen skin.
  • Step #3 Peel pepper, & remove & discard seeds.
  • Step #4 Finely chop pepper; set aside.
  • Step #5 Combine 1 c water & lemon rind in a small saucepan; bring to a boil.
  • Step #6 Reduce heat, uncovered, & let simmer, 2 mins.
  • Step #7 Drain & cool completely.
  • Step #8 Arrange baguette slices on an ungreased baking sheet; brush evenly with 2 tbsps olive oil.
  • Step #9 Bake at 400° for 6 mins or until golden.
  • Step #10 Combine sliced pepper, garlic, remaining olive oil, lemon rind, & next 4 ingredients in a small bowl.
  • Step #11 Spoon mixture evenly on baguette slices.
  • Step #12 *You may substitute commercial roasted whole green chile for fresh roasted pepper.
