Seviche De Camarones Con Mango Y Habanero (shrimp Seviche With Mango And Habanero) Recipe

Ingredients
  • 1/3 c sliced fresh cilantro
  • 1/2 c sliced jicama
  • 3 tomatoes, cored & halved
  • 1/2 habanero chile, seeded
  • 1/2 lb small shrimp, steamed & peeled
  • 1/4 c minced red onion
  •  Salt
  •  Avocado slices
  • 2 garlic cloves, halved
  • 1 c sliced mango
  •  Corn tortilla chips
  • 1 tsp extra-virgin olive oil

Directions
  • Step #1 Place tomatoes, cut-side down, & habanero, garlic, on a foil wrap-lined baking sheet.
  • Step #2 Broil 20 mins or until skins are blistered.
  • Step #3 Cool & remove skins.
  • Step #4 Combine shrimp, jicama, cilantro, mango, & red onion in a medium bowl.
  • Step #5 Place tomatoes, garlic, & habanero in a mixer, & process until smooth.
  • Step #6 Add tomato mixture to shrimp mixture; stir this to mix.
  • Step #7 Stir in olive oil.
  • Step #8 Salt to taste, cover, & chill at least 30 mins before serving.
  • Step #9 Top with avocado slices, & serve this with tortilla chips.
