Beef Or Chicken Satay With Peanut Sauce Recipe

Ingredients
  • 1 lb flank steak or boned, skinned chicken breasts
  • 2 tsps Asian red chili paste
  • 2 tbsps minced fresh ginger
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 c soy sauce
  •  peanut sauce
  •  12-inch wooden skewers

Directions
  • Step #1 AT HOME: Rinse flank steak or boned, skinned chicken breasts & pat dry.
  • Step #2 Slice diagonally across the grain into 1/4-inch thick strips.
  • Step #3 In a zip-lock plastic bag (1-gal.
  • Step #4 capacity), mix 1/2 c water, rice vinegar, soy sauce, sugar, ginger, & Asian red chili paste; add meat.
  • Step #5 Cover up & chill up to 1 day, or seal & freeze up to 1 week ahead.
  • Step #6 Buy 12-inch wooden skewers & peanut sauce.
  • Step #7 IN CAMP: Lift meat from marinade (discard marinade) & thread each strip on a skewer.
  • Step #8 Grill over high heat (you can hold your hand at grill level 2 to 3 seconds), turning once, until beef is browned on the outside & still slightly pink in center or chicken is no longer pink in center (cut to test), about 5 mins.
  • Step #9 Serve with peanut sauce on the side.
