Beet-and-blue Cheese Spread Recipe

Ingredients
  • 2 Granny Smith apples, each peeled & cut into 8 wedges
  • 2 beets (about 1 lb)
  •  Pita Chips
  • 1/4 c (1 oz) crumbled blue cheese
  • 1 tbsp prepared horseradish

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Leave root & 1 inch stem on beets; scrub with a brush.
  • Step #3 Wrap beets in foil wrap; bake this at 400° for 1 hr or until tender.
  • Step #4 Cool.
  • Step #5 Peel & trim off beet roots.
  • Step #6 Place beets, cheese, & horseradish in a food processor/blender, & process until well-mixed, apples, scraping sides of processor bowl every once in awhile.
  • Step #7 Serve with Pita Chips.
