Barbecued Pork Quesadillas Recipe

Ingredients
  • 1/2 c barbecue sauce
  •  Toppings: sour cream, sliced green onions, barbecue sauce
  • 1/2 lb shredded barbecued pork
  • 2 tbsps butter or margarine, softened
  • 1 c shredded Mexican four-cheese mix
  •  Garnish: fresh cilantro sprig
  • 8 (6-inch) flour tortillas
  • 5 green onions, minced
  • 1/4 c sliced fresh cilantro

Directions
  • Step #1 Stir together first 4 ingredients.
  • Step #2 Spoon pork mixture evenly on 1 side of each tortilla; sprinkle with cheese.
  • Step #3 Fold tortillas in half, pressing carefully to seal.
  • Step #4 Spread butter on both sides of quesadillas.
  • Step #5 Heat a large nonstick or cast-iron skillet over med-heat/flame, & cook quesadillas 2 to 3 mins on each side or until browned.
  • Step #6 Cut each quesadilla in half for main-dish servings or in quarters for appetizer servings.
  • Step #7 Serve with desired toppings.
  • Step #8 Garnish, if desired.
