Eggplant And Tomato-mint Salsa Recipe

Ingredients
  • 1 tsp extravirgin olive oil
  • 2 tsps fresh lemon juice
  • 1 1/2 c sliced seeded tomato
  • 1 garlic clove, minced
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp salt
  •  Cooking spray
  • 2 medium eggplants (about 1 1/2 lbs)
  • 1/4 c sliced fresh mint

Directions
  • Step #1 Prepare grill.
  • Step #2 Cut each eggplant in half lengthwise.
  • Step #3 Lightly score cut sides of eggplant.
  • Step #4 Place eggplant, cut sides down, on grill rack coated with cooking spray.
  • Step #5 Grill 20 mins or until very tender, turning every once in awhile.
  • Step #6 Scoop pulp from eggplant halves, & place this in a sieve over a bowl.
  • Step #7 Discard peels.
  • Step #8 Let pulp stand 1 hr or until cool & thoroughly drained.
  • Step #9 Discard liquid.
  • Step #10 Coarsely mash pulp, & place this in a small bowl.
  • Step #11 Stir in tomato & remaining ingredients.
  • Step #12 Serve at about room temp, stirring just before serving.
