Easy Baked Eggplant Parmesan
Ingredients
1 tsp extravirgin olive oil
2 tsps fresh lemon juice
1 1/2 c sliced seeded tomato
1 garlic clove, minced
1/2 tsp freshly ground black pepper
1/2 tsp salt
Cooking spray
2 medium eggplants (about 1 1/2 lbs)
1/4 c sliced fresh mint
Directions
Step #1 Prepare grill.
Step #2 Cut each eggplant in half lengthwise.
Step #3 Lightly score cut sides of eggplant.
Step #4 Place eggplant, cut sides down, on grill rack coated with cooking spray.
Step #5 Grill 20 mins or until very tender, turning every once in awhile.
Step #6 Scoop pulp from eggplant halves, & place this in a sieve over a bowl.
Step #7 Discard peels.
Step #8 Let pulp stand 1 hr or until cool & thoroughly drained.
Step #9 Discard liquid.
Step #10 Coarsely mash pulp, & place this in a small bowl.
Step #11 Stir in tomato & remaining ingredients.
Step #12 Serve at about room temp, stirring just before serving.
