Asparagus Spears With Smoked Salmon Spirals Recipe

Ingredients
  • 3 tbsps sour cream substitute (such as Tofutti Sour Supreme)
  • 1 tsp sliced fresh dill
  • 4 oz sliced smoked salmon, cut into 24 (1/4-inch-wide) strips
  • 24 asparagus spears
  •  Dill sprigs (optional)
  • 1 tsp sliced fresh tarragon

Directions
  • Step #1 Snap off tough ends of asparagus.
  • Step #2 Cook asparagus in boiling water 3 mins or until crisp-tender; drain.
  • Step #3 Rinse under cold water; drain.
  • Step #4 Pat dry.
  • Step #5 Combine sour cream substitute, 1 tsp dill, & tarragon in a small bowl.
  • Step #6 Spread about 1/2 tsp dill mixture over one side of each salmon strip.
  • Step #7 Wrap 1 salmon strip around each asparagus spear with dill mixture touching the asparagus.
  • Step #8 Garnish with dill sprigs, if desired.
