Grilled Pineapple Skewers With Rum Sauce Recipe

Ingredients
  • 1/2 c butter
  • 1/3 c dark rum
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  •  Vegetable cooking spray
  • 1 c firmly packed brown sugar
  • 12 (6-inch) wooden skewers
  • 3 fresh pineapples

Directions
  • Step #1 Soak skewers in water 30 mins.
  • Step #2 Stir together brown sugar & next 4 ingredients in a small saucepan over med-heat/flame, stirring constantly, until mixed.
  • Step #3 Cook over low heat/flame, without stirring, 10 mins or until sauce begins to thicken.
  • Step #4 Remove from heat; keep warm.
  • Step #5 Cut pineapples lengthwise into fourths, leaving crown ends on.
  • Step #6 Remove hard core from each quarter; cut pineapple pulp away from shell in one wedge-shaped piece, keeping the crown & shell intact.
  • Step #7 Set pineapple shell aside.
  • Step #8 Cut pineapple wedge into 8 equal crosswise slices, & thread onto wooden skewers.
  • Step #9 Repeat procedure with remaining wedges.
  • Step #10 Spray food grate with cooking spray, & place on grill.
  • Step #11 Place pineapple on grate.
  • Step #12 Grill, covered with grill lid, over medium-high heat (350° to 400°) 4 mins on each side or until thoroughly heated.
  • Step #13 Arrange skewers in reserved pineapple shells, & drizzle with warm rum mixture.
