Thai Sweet-hot Pineapple Blossoms Recipe

Ingredients
  • 1 pineapple (4 to 5 lb.)
  • 1/4 tsp hot chili flakes
  • 2 limes (3 to 4 oz. each)
  • 1/4 tsp cayenne
  • 1 tbsp salt

Directions
  • Step #1 Cut 1/2 inch off the top & bottom of pineapple.
  • Step #2 Slice off rind about 1/4 inch deep, from top to bottom.
  • Step #3 To remove eyes & make decorative notched edges, parallel, use a small knife to cut continuous, wedge-shaped rows (1/2 in.
  • Step #4 deep) into the sides of pineapple, following the spiral pattern of the eyes & working from top to bottom.
  • Step #5 Cut fruit crosswise into 1/4- to 1/2-inch-thick slices; arrange on a platter or plates.
  • Step #6 Cut limes into halves or wedges.
  • Step #7 Mix salt with chili flakes & cayenne.
  • Step #8 Squeeze lime over fruit & offer chili salt to add to taste.
