Chili-painted Portabellas In Puff Pastry Recipe

Ingredients
  • 1 to 2 tbsps puréed canned chipotle chilies (see notes)
  • 4 portabella mushrooms (3- to 4-in.-wide caps; 10 to 12 oz. total), cleaned (see below), stems trimmed flush with caps
  • 2 tbsps prepared oyster sauce
  • 1 large egg
  • 1 sheet (10 in. square) frozen puff pastry (half of a 1-lb. package), thawed

Directions
  • Step #1 Unfold puff pastry sheet on a lightly floured board; cut into quarters, each 5 inches square.
  • Step #2 Roll out each slightly into a 6-inch square.
  • Step #3 In a small bowl, mix oyster sauce & puréed chipotle chilies.
  • Step #4 Brush mixture generously over both sides of mushroom caps, using it all.
  • Step #5 Center each cap, gill side up, on a puff pastry square.
  • Step #6 Fold corners of pastry over mushroom to enclose, overlapping slightly; pinch edges together to seal.
  • Step #7 Set bundles, seams down & slightly apart, on a 12- by 15-inch baking sheet lined with cooking parchment.
  • Step #8 In a small bowl, beat egg to mix with 1 tbsp water.
  • Step #9 Brush tops & sides of pastry bundles lightly with egg mixture (discard extra).
  • Step #10 With a small, sharp knife, cut three or four slits (each about 1/4 in.
  • Step #11 long) through pastry across top of each bundle.
  • Step #12 Bake in a 425° regular or convection oven until puff pastry is golden brown, about 10 mins.
  • Step #13 Serve warm.
  • Step #14 Cleaning mushrooms: Trim off tough or discolored bottoms of mushroom stems & any bruised spots or blemishes.
  • Step #15 (For shiitakes & oysters, remove the entire fibrous stem.
  • Step #16 ) For firm mushrooms such as portabellas, rinse thoroughly under cool running water, wipe dirt off with a damp cloth or place this in a colander, & pat dry with towels.
  • Step #17 For delicate mushrooms that have lots of places for dirt to hide, such as chanterelles & hedgehogs, submerge in a bowl of cool water & carefully agitate with you hands to loose any particles.
  • Step #18 Drain, rinse carefully under running water, & carefully pat dry with a towel.
