Corned Beef Omelet Recipe

Ingredients
  • 2 green onions, sliced
  • 2 tbsps butter or margarine
  • 1/2 c shredded Cheddar cheese
  • 1 c cubed cooked corned beef
  • 6 eggs
  • 1/4 c milk
  • Dash pepper

Directions
  • Step #1 In a large skillet, saute the onions in butter.
  • Step #2 In a bowl, lightly beat eggs & milk; pour over the onions.
  • Step #3 Cook over med-heat/flame; as the eggs set, lift edges, letting uncooked portion flow underneath.
  • Step #4 When the eggs are nearly set, sprinkle with the corned beef, cheese & pepper.
  • Step #5 Remove from the heat; cover & let this stand for 1-2 mins or until the cheese is melted.
  • Step #6 Cut into wedges.
