Ham And Pineapple Spears Recipe

Ingredients
  • 1 pineapple, peeled & cut into 20 long spears
  • 2 tbsps olive oil
  • 3 inner celery stalks, cut into 3-inch pieces (optional)
  • 1 lb baked ham (such as Black Forest), thinly sliced
  • 2 tbsps balsamic vinegar

Directions
  • Step #1 Fold each slice of ham in half & wrap it around the center of a pineapple spear.
  • Step #2 Heat 1 tbsp of the oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #3 Place 10 of the wrapped pineapple spears in the pan.
  • Step #4 Sear on each side until golden, about 2 mins.
  • Step #5 Drizzle 1 tbsp of the vinegar over the pineapple spears & cook this until the vinegar bubbles up & thickens slightly, about 1 min.
  • Step #6 Transfer to a plate & cover with foil wrap while repeating the cooking instructions with the remaining ingredients.
  • Step #7 Serve with the celery stalks, if desired.
  • Step #8 Tip: If you're serving the spears as passed cocktail food, wrap them in advance & put in the fridge until needed, for up to 6 hrs.
  • Step #9 Cook just before serving.
