Crab Cakes With Chive Sauce Recipe

Ingredients
  •  Cooking spray
  •  Sauce:
  • 1 tsp Old Bay seasoning
  • 1/8 tsp ground red pepper
  • 2 tbsps sliced fresh chives
  • 1/4 tsp freshly ground black pepper
  • 2 lbs lump crabmeat, shell pieces removed
  • 2 tsps sliced fresh oregano
  • 3 tbsps quick-cooking oats
  • 1 tsp sliced fresh parsley
  • 6 tbsps plain fat-free yogurt
  • 1/2 c reduced-fat mayonnaise
  • 2 tbsps dry breadcrumbs
  • 6 tbsps reduced-fat mayonnaise
  •  Crab Cakes:
  • 1 tsp Dijon mustard
  • 1/2 tsp fresh lemon juice

Directions
  • Step #1 To prepare crab cakes, mix first 9 ingredients In a large-ish bowl, stirring carefully just until mixture is mixd & will hold a shape.
  • Step #2 Divide mixture into 30 equal portions (about 2 tbsps each), shaping each into a 2-inch patty.
  • Step #3 Heat a large nonstick skillet over medium-high heat.
  • Step #4 Coat pan with cooking spray.
  • Step #5 Add 8 patties; cook 2 mins.
  • Step #6 Carefully turn patties over.
  • Step #7 Cook an extra 2 mins or until golden.
  • Step #8 Place patties on a large baking sheet in a single layer.
  • Step #9 Repeat procedure with cooking spray & remaining patties.
  • Step #10 Cover up patties with plastic wrap, & freeze until firm.
  • Step #11 Place in zip-top plastic bags; freeze up to 3 months.
  • Step #12 Thaw cakes overnight in refrigerator.
  • Step #13 Preheat oven to 400º.
  • Step #14 Coat a large baking sheet with cooking spray; place patties on baking sheet in a single layer.
  • Step #15 Bake at 400° for 20 mins or until thoroughly heated.
  • Step #16 To prepare sauce, mix chives & remaining ingredients in a small bowl.
  • Step #17 Serve with crab cakes.
