Chicken Nuggets With Honey Mustard
Ingredients
1 tsp sliced fresh parsley
1 tbsp olive oil
1 tbsp prepared horseradish
1 lb skinless, boneless chicken breast halves
1/2 lb sliced Swiss cheese
salt & pepper to taste
1 tsp sliced fresh tarragon
1/4 c Dijon mustard
1/2 lb sliced cooked ham
2 c white wine
salt & pepper to taste
2 c white wine
1 tbsp all-purpose flour
2 tbsps brown sugar, divided
3 tbsps honey
Directions
Step #1 To Marinate: Mix 2 c wine, tarragon, parsley & oil in a nonporous glass dish or bowl and.
Step #2 Add chicken, & toss to coat.
Step #3 Cover dish or bowl, & put in the fridge to marinate for at least 4 hrs.
Step #4 Remove chicken from marinade, & pour marinade into a large skillet over medium high heat.
Step #5 Cut chicken breasts in half vertically & quickly flatten each piece to 1/2 inch thickness with a meat mallet.
Step #6 Layer each piece a slice of cheese, slice of ham, & a sprinkle of brown sugar.
Step #7 Roll & secure with toothpicks, then brown in skillet with marinade.
Step #8 Preheat oven to 325F degrees F (165 degrees C).
Step #9 Place browned rollups in a 9x13 inch baking dish & pour a small amount of marinade over chicken, reserving at least 3 tbsps in the skillet.
Step #10 Sprinkle top chicken with salt & pepper to taste & a small amount of brown sugar.
Step #11 Bake chicken rollups in preheated oven for about 30 mins, or until cooked through & chicken juices run clear.
Step #12 To Make Sauce: Meanwhile, add flour to skillet with reserved marinade.
Step #13 Add 2 c wine, stirring constantly, letting sauce thicken.
Step #14 Then stir in the mustard, honey, a bit of brown sugar & horseradish.
Step #15 Spice up with salt & pepper to taste, heat through & serve this with chicken rollups.
