Forest-mushroom Dip Recipe

Ingredients
  • 1 tsp dried thyme
  • 3/4 tsp salt
  • 1/2 c (2 oz) finely shredded smoked gouda cheese
  • 1 tbsp lemon juice
  • 1/2 c dry white wine
  • 1/2 c low-fat sour cream
  • 1 tbsp green-onion tops (optional)
  • 3 tbsps sliced fresh parsley
  • 1/8 tsp black pepper
  • 1 (8-oz) package button mushrooms
  • 1/4 c (2 oz) 1/3-less-fat cream cheese, softened
  • 1 garlic clove, halved
  • 2 tbsps all-purpose flour
  • 2 (6-oz) packages portobello mushroom caps, quartered

Directions
  • Step #1 Place half of the mushrooms in a food processor/blender, & process until finely sliced.
  • Step #2 Spoon sliced mushrooms into a large skillet.
  • Step #3 Place the remaining mushrooms & garlic in processor, & process until finely sliced.
  • Step #4 Spoon mushroom mixture into pan; add wine & thyme.
  • Step #5 Cook over medium-high heat for 10 mins or until liquid almost evaporates.
  • Step #6 Sprinkle top the mixture with flour, & stir well.
  • Step #7 Stir in cream cheese, salt, lemon juice, & pepper; cook 1 min.
  • Step #8 Spoon into a serving bowl; cover & cool.
  • Step #9 Stir in gouda, sour cream, & parsley.
  • Step #10 Sprinkle top with green-onion tops, if desired.
  • Step #11 Cover up & chill in the fridge.
