Streusel-topped Lemon Shortbread Bars Recipe

Ingredients
  • 1 tsp baking powder
  • 1 1/4 c all-purpose flour, divided
  • 1 c cold butter, cut into 1/2-inch pieces & divided
  • 2 c all-purpose flour
  •  Powdered sugar
  • 6 large eggs
  • 3 tbsps sugar
  • 4 tsps grated lemon rind
  • 2 egg yolks
  • 2 1/2 c sugar, divided
  • 1/2 tsp salt
  • 1/2 c fresh lemon juice
  • 1/4 tsp salt

Directions
  • Step #1 Combine first 3 ingredients in a food processor/blender.
  • Step #2 Add 3/4 c butter pieces to food processor/blender, & pulse 12 to 15 times or until mixture resembles coarse meal; chill remaining 1/4 c butter pieces.
  • Step #3 Add egg yolks, & process just until mixture forms clumps.
  • Step #4 (Clumps will be moist.
  • Step #5 ) Press mixture onto bottom of a lightly greased 13- x 9-inch pan.
  • Step #6 Bake at 350° for 16 to 18 mins or just until golden brown around edges.
  • Step #7 Remove pan from oven, & reduce temperature to 325°.
  • Step #8 Whisk together eggs & 2 c sugar In a large-ish bowl until mixed.
  • Step #9 Combine 1/2 c flour & baking powder; whisk into egg mixture until mixed.
  • Step #10 Whisk in 4 tsp.
  • Step #11 grated lemon rind & 1/2 c fresh lemon juice.
  • Step #12 Immediately pour lemon mixture over hot crust in pan.
  • Step #13 Bake at 325° for 20 to 25 mins or until filling is set.
  • Step #14 Remove from oven.
  • Step #15 Combine 1/4 tsp.
  • Step #16 salt, remaining 1/2 c sugar, & remaining 3/4 c flour.
  • Step #17 Cut in reserved 1/4 c butter pieces with a pastry mixer or fork until crumbly.
  • Step #18 Sprinkle top topping over hot lemon mixture, & bake 25 more mins or just until lightly golden.
  • Step #19 Let cool completely on a wire rack.
  • Step #20 Cut into 32 (1 1/2- x 2-inch) bars, & sprinkle evenly with powdered sugar.
