1 c cold butter, cut into 1/2-inch pieces & divided
2 c all-purpose flour
Powdered sugar
6 large eggs
3 tbsps sugar
4 tsps grated lemon rind
2 egg yolks
2 1/2 c sugar, divided
1/2 tsp salt
1/2 c fresh lemon juice
1/4 tsp salt
Directions
Step #1 Combine first 3 ingredients in a food processor/blender.
Step #2 Add 3/4 c butter pieces to food processor/blender, & pulse 12 to 15 times or until mixture resembles coarse meal; chill remaining 1/4 c butter pieces.
Step #3 Add egg yolks, & process just until mixture forms clumps.
Step #4 (Clumps will be moist.
Step #5 ) Press mixture onto bottom of a lightly greased 13- x 9-inch pan.
Step #6 Bake at 350° for 16 to 18 mins or just until golden brown around edges.
Step #7 Remove pan from oven, & reduce temperature to 325°.
Step #8 Whisk together eggs & 2 c sugar In a large-ish bowl until mixed.
Step #9 Combine 1/2 c flour & baking powder; whisk into egg mixture until mixed.
