White Chili Snackers Recipe

Ingredients
  • 1 (15-oz) can Great Northern beans, drained
  • 1/2 c tomatillo salsa
  • 20 (3-inch) crackerbread rounds (or water crackers)
  • 1/2 c (2 oz) shredded reduced-fat Monterey Jack cheese
  •  Cherry tomato wedges (optional)
  • 2 (4-oz) packages roast-flavored chicken breast halves
  • 1/4 tsp ground cumin
  •  Fresh cilantro leaves (optional)

Directions
  • Step #1 Broil chicken according to package directions; let cool slightly.
  • Step #2 Shred chicken, & set aside.
  • Step #3 Position knife blade in food processor/blender bowl; add beans & cumin.
  • Step #4 Process 1 1/2 mins.
  • Step #5 Spread mixture over crackers; top this with salsa & chicken.
  • Step #6 Sprinkle top with cheese.
  • Step #7 Place on a baking sheet; bake this at 400° for 5 mins.
  • Step #8 If desired, garnish with tomato & cilantro.
