Soybean Hummus Recipe

Ingredients
  • 1/8 tsp hot pepper sauce
  • 6 (6-inch) pitas, cut into 8 wedges
  • 2 tbsps sliced fresh flat-leaf parsley
  • 3 tbsps olive oil
  • 2 tbsps fresh lemon juice
  • 1/4 c water
  • 1 tsp kosher salt
  • 1 c frozen, shelled edamame (green soybeans)
  • 1/2 tsp minced garlic

Directions
  • Step #1 Combine soybeans & 1/4 c water in a small saucepan; bring to a boil.
  • Step #2 Reduce heat, & let simmer 10 mins.
  • Step #3 Drain.
  • Step #4 Combine soybeans, juice, oil, garlic, salt, & hot pepper sauce in a food processor/blender; process until smooth.
  • Step #5 Add parsley, & process until mixed.
  • Step #6 Serve with pita wedges.
