Tandoori Seafood Kebabs Recipe

Ingredients
  • 2 lbs salmon fillets, cut into 2-inch cubes
  • 1 tbsp minced fresh ginger
  • 1 jalapeño, seeded & minced
  • 2 tbsps fresh lime juice
  • 1 onion, cut into thin wedges
  • 1 pint cherry tomatoes
  • 2 tbsps sliced fresh cilantro
  • 1/2 to 1 tsp salt
  • 1 tbsp ground cumin
  • 1 (8-oz) container plain yogurt
  • 1/2 tsp ground cardamom
  • 2 garlic cloves, minced

Directions
  • Step #1 Stir together first 9 ingredients In a large-ish shallow dish.
  • Step #2 Add fish, tossing carefully to coat.
  • Step #3 Cover up & chill 30 mins.
  • Step #4 Alternately thread salmon, onion, & tomatoes on 8 (6- to 8-inch) skewers.
  • Step #5 Grill, covered with lid, over medium-high heat (350° to 400°) 4 to 6 mins on each side or until done.
