Ingredients

  •  Basil sprigs (optional)
  •  Brown Rice Risotto with Pumpkin, chilled

Directions
  • Step #1 Divide Brown Rice Risotto with Pumpkin into 18 equal portions, shaping each into a 1/2-inch-thick patty.
  • Step #2 Heat 1 1/2 tsps oil In a large-ish nonstick skillet over medium-high heat.
  • Step #3 Add 9 patties; cook 3 mins.
  • Step #4 Carefully turn patties; cook 3 mins on each side or until golden.
  • Step #5 Repeat procedure with remaining 1 1/2 tsps oil & patties.
  • Step #6 Garnish with basil, if desired.
