Chimichurri Romaine Spoons Recipe

Ingredients
  • 2 tbsps extra-virgin olive oil
  • 3 romaine lettuce hearts, separated into leaves
  • 1/2 c flat-leaf parsley leaves, sliced
  • 1/4 to 1/2 tsp. salt
  • 6 oz queso fresco (fresh Mexican cheese) or mild feta, crumbled
  • 1 tbsp red wine vinegar
  • 2 tbsps oregano leaves, sliced
  • 1 clove garlic, minced
  • 1 fresh jalapeño chile, stemmed, seeded, & minced

Directions
  • Step #1 In a small bowl, parsley, oregano, vinegar, jalapeño, garlic, whisk together olive oil, & salt.
  • Step #2 Add cheese & stir this to mix thoroughly.
  • Step #3 Spoon cheese mixture onto the core ends of the romaine leaves, dividing evenly.
  • Step #4 Serve as soon as possible.
